The charming interior of the 4ECK alone is worth a visit, and the four-hands menu by the two renowned chefs is even more so. Betz, originally from Garmisch-Partenkirchen, has worked in Switzerland, Sylt, and London, eventually becoming a finalist on the SAT.1 cooking show "The Taste." Fehren, head chef at the 4ECK, worked at Steigenberger and Kempinski hotels before moving to the mountains, where he even served as sous chef at the Panorama Restaurant on the Zugspitze. Regarding the beef tartare: "We grew the cola herb, or southernwood, ourselves in the garden. We infuse it in oil, and it creates an absolutely exciting flavor bridge to the tomato." Regarding the salmon trout: "The earthiness of the beetroot and the creaminess of the cream cheese complement the salmon trout perfectly, and the pani puri adds a subtle Asian touch." Regarding the 'Garden of Eden' soup: "You simply must experience the foam made with HJB Alpin Gin!" And regarding the local wild venison: "With shiso and sake in the sauce, it does something special – I can tell you, it's fantastic! You'll be back."
The accompanying wines
A Köster Wolf Pinot Blanc was served with the steak tartare; a 2024 Schiefer Riesling from the VDP winery Nik Weis, St. Urbanshof, in Leiwen/Mosel with the salmon trout. "We chose it for its mineral notes, which go perfectly with the fish and the beetroot." A 2023 Cuvée 'Black Lupus' from the Wolf winery in Bad Dürkheim was poured with the local venison: "A touch of spice from the Cabernet Sauvignon at the start, rounded off beautifully by the Merlot – a perfect match."
6-course menu including wine pairing or non-alcoholic beverage pairing, aperitif, coffee, and water.
